Preheat the oven to 400°F (200°C).

Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into 4 squares.

In a bowl, mix the sliced apples, sugar, cinnamon, and lemon juice until well combined.

Place a spoonful of the apple mixture in the center of each pastry square.

Fold the corners of the pastry over the apple filling to create a pocket and seal the edges with a fork.

Brush the tops of the pastries with the beaten egg to give them a golden color when baked.

Place the pastries on a baking sheet lined with parchment paper.

Bake in the preheated oven for 20-25 minutes or until golden brown and puffed up.

While the pastries are baking, heat the apricot jam and water in a small saucepan until melted and smooth.

Once the pastries are done, remove them from the oven and brush the warm apricot glaze over the top of each pastry.
