Preheat gas grill to high heat (450-500°F).
In a small bowl, combine 1 cup mayonnaise, 1 tablespoon pesto, and 2 cloves finely minced garlic.
Juice one lemon, catching seeds with hands, and add to the mayonnaise mixture with a pinch of salt. Stir until well combined.
Cover the mayonnaise mixture with plastic wrap and refrigerate until ready to assemble burgers.
Roughly chop 1/2 cup sun dried tomatoes into small pieces.
In a bowl, combine 36 ounces ground turkey, 1/2 medium diced onion, chopped sun dried tomatoes, and minced garlic.
Add 1 teaspoon dried oregano, 1/2 teaspoon Morton kosher salt, 1/2 teaspoon freshly ground black pepper, and 1/2 cup pesto to the turkey mixture.
Mix the ingredients by hand, ensuring hands are clean or using gloves.
Divide the mixture into eight patties, weighing about six ounces each, and form them into patties with a depression in the center.
Season each side of the patties with additional salt and pepper, and refrigerate until ready to grill.
Cook the patties on the preheated grill over direct heat for 3 to 5 minutes on each side, or until they reach an internal temperature of 165°F.
While the first side is cooking, cut fresh mozzarella into slices.
After flipping the burgers, add 1 to 2 slices of mozzarella cheese on top of each patty and cover the grill to melt the cheese.
Use a meat thermometer to check the internal temperature of the burgers.
Toast ciabatta rolls and prepare a tomato by slicing it with a serrated knife.
Spread the pesto mayonnaise on the toasted ciabatta roll, then add tomato slices, romaine lettuce, and a burger patty.
