Trim the ends of the onions and cut them in half, then slice them into pieces between an eighth to a quarter of an inch thick.

Add the sliced onions to a large non-stick pan along with 3/4 cup of water, 2 tablespoons of vegetable oil, and 3/4 teaspoon of kosher salt.

Cover the pan with a lid and cook over medium-high heat for about 10 to 15 minutes until the onions start to soften and the water evaporates.

After 15 minutes, spread the onions out with a spatula and press them into the pan to form an 'onion cake'.

Let the onions cook without stirring for about 30 to 40 seconds to allow fond to form on the bottom of the pan, then stir to scrape up any fond.

Continue cooking the onions, stirring occasionally, for about 20 to 30 minutes until they turn a dark rich amber color.

Once the onions are caramelized, make a solution with 1 tablespoon of water and 1/8 teaspoon of baking soda, then add it to the onions.

Cook for another minute until all the moisture evaporates, then remove from heat.

For the dip, chop about 2 tablespoons of fresh chives and set aside.

In a mixing bowl, combine 2/3 cup of the caramelized onions, 2/3 cup of sour cream, chopped chives, a splash of white vinegar, salt, and pepper to taste.
