Preheat the oven to 375°F (190°C).
In a bowl, mix together 1 1/4 cups of all-purpose flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt until well combined; set aside.
In another bowl, mix together 1/2 cup of vegetable shortening, 1/3 cup of granulated sugar, and 1/4 cup of brown sugar until smooth and creamy.
Crack in 1 large egg and beat until the mixture is no longer curdled and smooth.
Add 1/2 teaspoon of vanilla extract and beat it in.
Gradually add the flour mixture to the wet mixture and beat on low until it forms a thick batter.
Fold in 3/4 cup of dairy-free chocolate chips.
Scoop tablespoon-sized portions of dough onto a baking sheet, spacing them 2 inches apart.
Bake for 8 to 12 minutes, until the edges are golden brown and the centers are slightly soft.
Let the cookies sit on the cooling rack for 2 to 3 minutes before removing them from the baking sheet.
Allow the cookies to cool completely before storing.
