豆腐の両面に塩(分量外)をふり、2枚重ねにしたキッチンペーパーで包んで耐熱容器に入れます。レンジ500Wで3分加熱して取り出し、重しをのせて10分ほど水切りします。

キッチンペーパーを外し、縦半分に切って切り口から横に包丁を入れてポケットを作り、とろけるチーズを半量ずつ詰めます。

②の形を整えて、小麦粉、卵、パン粉の順に衣を付けます。

フライパンにサラダ油を深さ1.5cmほど入れて熱し、180度に温まったら③を入れて揚げ焼きにします。両面がこんがりきつね色になったらバットに上げ、油を切ります。

フライパンにソースの材料を入れて火にかけ、ひと煮立ちさせたら④を入れ、全体にソースを絡めます。ごはんとキャベツを盛った器にのせ、フライパンに残ったソースをかけて白ごまをふったら完成です。
