Heat oil in a deep skillet over medium heat until shimmering.
Fry the plantain slices until golden brown, about 2-3 minutes per side.
Remove the fried plantains and drain on paper towels.
Flatten each slice with a spatula or the bottom of a plate.
Return the flattened plantains to the hot oil and fry again until crispy, about 2-3 minutes.
Remove from oil and drain on paper towels again.
Sprinkle with salt, black pepper, and cayenne pepper to taste.
Drizzle with lime juice and garnish with chopped cilantro.
