Vegetable oil is more affordable and suitable for frying.
Cut the ends off the plantain and slice it lengthwise to peel the skin off.
Cut the plantain into medium-sized pieces, about 1.25 inches each.
Juice half of a lime and add it to the plantain pieces.
Add 1/4 cup of vinegar and 1 teaspoon of Celtic sea salt to the plantains.
Cover the plantains with lukewarm water and let them sit for a few minutes.
Heat oil in a deep skillet to 375 degrees Fahrenheit.
Fry the plantain pieces until light golden brown, about 7 minutes.
Remove the fried plantains and drain on paper towels.
Press each plantain using a tostonera or two plates to flatten them.
Dip the flattened plantains back into the marinade liquid and fry again until crispy, about 3 minutes.
Remove from oil and drain on paper towels again.
