In Lebanon, it's common to enjoy Khibiz Saj with dips like hummus or baba ghanoush, making it a beloved part of communal meals. Mix 8 cups of whole wheat flour, sugar, and dry yeast in a bowl.
Make a well in the middle and gradually add 5 cups of water, mixing until combined.
If the dough is too loose, add 2-3 tablespoons of whole wheat flour until it is not sticking to hands.
Knead the dough until it is smooth and silky, ensuring it does not stick to the sides of the bowl.
Cover the dough with flour and shape into small balls, then cover with a wet towel and let rise for 45 minutes to 1 hour until doubled in size.
Turn on the saj to preheat it.
Roll out the dough balls into thin circles, focusing on keeping the edges thicker than the center.
Cook the bread on the saj until it turns a nice golden color, using a knife to help if it sticks.
