Whole wheat flour increases fiber content.
In a mixing bowl, add warm milk, a pinch of sugar, and dry active yeast, then stir until well combined.
Add melted butter, flour, salt, and baking soda to the bowl and mix until combined, adding flour gradually until a dough forms.
Once the dough forms, add chopped spring onions and sesame seeds, mixing until well combined.
Cover the dough with a cloth and let it rest for 25 to 30 minutes.
After resting, line your working surface with parchment paper and transfer the dough onto it, dividing it into two equal parts.
Flatten one part of the dough with your palm, then use a rolling pin to roll it very thin, less than 1 mm thick.
Use a pastry cutter to cut the dough into squares, measuring 3x3 inches, or cut to your desired size.
Prick the cut squares with a fork to create little holes.
Arrange the crackers on a baking tray and bake at 170°C for 15 to 20 minutes, checking for doneness at 18 minutes.
