Wash the ripe plantains.
Cut the plantains into small sizes.
Mix the plantains with seasoning powder, ginger powder, garlic powder, onion salt, and vegetable oil in a bowl.
Place the seasoned plantains in a hot oven.
Roast for 10 to 15 minutes, turning the plantains over from time to time for even cooking.
For the sauce, heat vegetable oil in a pan and add chopped onion and pepper mix.
Add seasoning powder to the sauce and stir to combine.
Add leftover cow skin and stock fish to the sauce and cook for a few minutes.
