Add a teeny tiny pinch of cinnamon to the food processor.
Add 1 teaspoon of cinnamon to the food processor.
Add 0.5 teaspoon of salt to the food processor.
Add 1 teaspoon of baking soda to the food processor.
Pulse the mixture for a few seconds to combine the ingredients.
Add cubed chilled butter to the food processor.
Pulse until the mixture resembles coarse crumbs with tiny pieces of butter.
Add 0.25 cup of water to the mixture.
Add 0.25 cup of honey to the mixture.
Pulse the mixture one more time until combined.
Roll out the dough between two pieces of parchment paper until about 0.25 inch thick.
Cut the rolled dough into desired shapes using cookie cutters.
Place the cut shapes onto a parchment-lined baking sheet.
Bake in a 350°F oven until done.
