Heat 2 tablespoons of extra virgin olive oil and 2 tablespoons of butter in a large pan until the butter melts.
Cut larger mushrooms into quarters.
Add the quartered mushrooms to the pan and cook for about 10 minutes, stirring occasionally.
Add half a teaspoon of salt and half a teaspoon of black pepper to the mushrooms and stir.
Squeeze the juice of half a lemon over the mushrooms, being careful to avoid seeds.
Continue cooking the mushrooms on medium heat, allowing them to cook down and release their water.
Cook for a total of about 10 minutes until the mushrooms are tender and have darkened slightly.
Remove from heat and serve as a side dish.
