Cut larger mushrooms in half before slicing.

Add the sliced mushrooms to the pan and allow them to sear without stirring immediately.
Cook the mushrooms until they release their liquid and become tender, stirring occasionally.
Add 2 tablespoons of vermouth to the pan, being cautious of potential flames due to the alcohol.
Add 1 clove of minced garlic to the pan and stir until fragrant.
Season the mushrooms with kosher salt and black pepper to taste.
Add about 1 tablespoon of soy sauce to the mushrooms and stir to combine.
Mix in chopped parsley before serving.
