Italian Sautéed Mushrooms

Olive oil is healthier and provides a similar flavor profile.

Basil offers a different flavor and dried parsley is more economical.
Heat a large sauté pan over medium heat.
Add 2 tablespoons of butter and 1 tablespoon of extra virgin olive oil.
Add 4 cloves of minced garlic and 2 tablespoons of spices to the pan and stir into the butter.
Add the mushrooms to the pan; it will look like a lot but will shrink down.
Sauté the mushrooms without stirring for 3 to 4 minutes.
Stir the mushrooms for 7 to 9 minutes more until golden brown.
Add a little salt and pepper to taste.
Add 2 tablespoons of balsamic vinegar to brighten the mushrooms and scrape any brown bits off the bottom of the pan.
Turn off the heat and garnish with fresh herbs, and optionally add a little lemon juice or parmesan cheese.
