Clean the mushrooms to remove all soil.
Cut the mushrooms into even slices, ensuring they are all the same thickness.
Heat a large frying pan over medium-high heat.
Add extra virgin olive oil to the pan, enough to lightly coat it.
Wait until the oil is hot enough to almost smoking before adding the mushrooms.
Add the mushrooms to the pan away from you, ensuring they are spread out and not overcrowded.
Do not salt the mushrooms at this stage to prevent them from releasing moisture too quickly.
Cook the mushrooms, moving them around occasionally to achieve browning on all sides.
Reduce the heat to medium as the mushrooms cook and continue to monitor for browning.
Once browned, season the mushrooms with coarse salt and black pepper at the end of cooking.
Add butter to the pan to deglaze and add flavor to the mushrooms.
