St. Louis Toasted Ravioli

Cultural Context

Originating from St. Louis, Missouri, toasted ravioli is a beloved local specialty that reflects the Italian immigrant influence on American cuisine. Traditionally, these ravioli are breaded and deep-fried, providing a crispy exterior that contrasts with the tender pasta and savory filling. Often served as an appetizer, they are typically accompanied by marinara sauce for dipping. Over the years, toasted ravioli has gained popularity beyond St. Louis, becoming a staple at fairs and Italian restaurants across the United States.

1

Thaw your ravioli before starting if using frozen. There is no need to cook beforehand.

2

In separate pie plates or bowls, add breadcrumbs in one and combine eggs and water in another.

3

Bread your ravioli by first submerging in the egg and letting the excess drip off, then dredging in the breadcrumb.

4

Shake off excess and set aside.

5

When all raviolis have been breaded, repeat the process to bread again.

6

Set aside to dry for 15-20 minutes before frying.

7

Bring vegetable oil to 350°F in a heavy pan over medium-high heat.

8

Fry in small batches until golden brown, about 3 minutes.

9

Remove to a paper towel to drain and then transfer to a serving plate.

10

Sprinkle with shredded parmesan cheese and serve with marinara sauce.

11

For the marinara, combine all ingredients in a small saucepan and bring to a bubble over medium-high heat stirring constantly.

12

Cook for 1-2 minutes and let cool slightly before using.
