1 jalapeno pepper
1 red onion
1 medium tomato
1/2 cup cilantro
1/4 cup flat parsley
1 teaspoon sweet smoked paprika
1 teaspoon salt
1 teaspoon pepper
2 tablespoons lime juice
1 tablespoon sherry vinegar
3 tablespoons EVOO
8 flour or corn tortillas
1/2 cup Cotija or queso fresco cheese
1 avocado
1/4 cup pickled jalapeno pepper rings
