1

Combine 7g active dry yeast, 1 tablespoon sugar, and 300ml warm water in a bowl and let sit for 15 minutes.

2

Add 250g of all-purpose flour to the yeast mixture and stir well.

3

Pour in the remaining warm water and stir until combined.

4

Cover the mixture and let it sit for an hour until bubbles appear.

5

Add the remaining 250g of flour and 8g of fine salt, then mix well by hand or with a KitchenAid mixer.

6

Knead the dough on a floured surface for about 8 minutes until smooth, forming it into a ball.

7

Coat a large bowl with oil and place the dough inside, coating it with oil as well.

8

Cover the bowl and let the dough rise for an hour until it is very soft and hollow.

9

Transfer the dough back to the work surface and optionally knead again until smooth.

10

Divide the dough into 10 pieces, each about 90g, and form them into balls, covering them for 15 minutes.

11

Flatten each ball, roll, and pinch to form oval or round shapes, or longer shapes if desired.

12

Cover and let the shaped rolls rest on an oiled baking tray for an hour.

13

Preheat the oven to 230°C (450°F) 15 minutes before baking.

14

Prepare a baking pan in the bottom of the oven.

15

After slashing and spraying the dough, insert the baking tray into the oven.

16

Pour 1 cup of hot water into the prepared pan on the bottom of the oven.

17

Spray the sides of the oven and close immediately to trap steam inside.

18

Slash the dough quickly in the middle with a sharp knife or blade and spray the surface with water.

19

Bake at 230°C (450°F) for 20 minutes, switching the position of the rolls and spraying again with water after 10 minutes.
