Mix 300 milliliters of lukewarm water with 5 grams of fresh yeast in a bowl.
Sift 500 grams of flour (type 550) into a mixing bowl.
Add 10 grams of salt and 20 milliliters of olive oil to the flour and mix well.
Knead the dough for about 10 minutes until smooth.
Cover the bowl and let the dough rest at room temperature overnight.
In the morning, the dough should have risen and be easy to handle.
Divide the dough into equal portions weighing 90 grams each using a kitchen scale.
Shape each piece by folding the edges towards the center and then rolling it into a ball.
Cover the shaped rolls with a cloth and let them rise for 45 minutes at room temperature.
Preheat the oven to 200°C (392°F) and place a dish of warm water inside to create steam.
After 45 minutes, place the rolls on a baking sheet, spaced apart.
Make cuts on the surface of the rolls with a sharp knife, either horizontally or vertically.
Spray the rolls with water or brush them with water if you don't have a spray bottle.
Bake in the preheated oven at 250°C (482°F) for 20 minutes until golden brown.
