These crusty, soft rolls are a staple in bakeries across Germany, symbolizing the country's rich baking heritage. Today, variations exist globally, with many countries adopting their own versions of these beloved rolls, making them a versatile addition to any meal.

Sourdough adds flavor, while instant yeast is often cheaper.
Add half of the cold water to a mixing bowl.
Crumble 15 grams of yeast into the water and whisk until dissolved.
Add 500 grams of flour to the bowl, followed by a teaspoon of salt and a little bit of sugar.
Add 1 teaspoon of malted barley flour to the mixture.
Mix the ingredients together, slowly adding more water while checking the dough's consistency.
Mix for 10 to 12 minutes until the dough has elasticity and is not breaking apart easily.
Let the dough rest covered with a cloth for 5 to 10 minutes.
After resting, weigh the dough (about 807 grams) and divide it into portions of roughly 18 grams each for even baking.
Shape each portion into a round roll by rolling it in the palm of your hand.
Cover the shaped rolls and let them rest for another 5 minutes.
Preheat the oven to the highest temperature possible and place a baking stone on the lowest rack.
After resting, flatten each roll slightly, flip it over, and roll it on the bottom side to shape it properly.
