These crusty, soft rolls are a staple in bakeries across Germany, symbolizing the country's rich baking heritage. Today, variations exist globally, with many countries adopting their own versions of these beloved rolls, making them a versatile addition to any meal.

Mix 4 su bardağı un and 1 tatlı kaşığı tuz in a mixing bowl.
In a separate bowl, mix 1.5 su bardağı ılık su, 3 tane kesme şeker, and 1 paket maya together.
Pour the water, sugar, and yeast mixture into the flour and salt mixture and stir until combined.
Knead the dough until it reaches a consistency similar to an earlobe, then cover it and let it rest in a warm place for 1 hour.
After 1 hour, check the dough to see if it has risen.
Gently knead the dough a little without deflating it too much.
Divide the dough into 12 equal pieces.
Shape each piece by folding the edges inward to create a round shape, with the seam side down.
Place the shaped rolls on a baking sheet lined with parchment paper, ensuring they have space between them.
Cover the rolls and let them rest for 25-30 minutes.
Brush the tops of the rolls with a little milk.
Sprinkle the tops with sesame seeds, sunflower seeds, and nigella seeds if desired.
Make cuts in the center of each roll using a sharp knife.
Cover the rolls with another baking sheet and bake in a preheated oven at 240°C for 10-15 minutes.
After 10-15 minutes, remove the top baking sheet and continue baking until the tops are golden brown.
