Vietnamese Chicken Noodle Soup

1 Rotisserie Chicken
1 Yellow Onion (Peeled)
1-2 Ginger Knobs (Peeled)
1 Pho Spice Bag (or spices: 2 Star Anise, 1 Cinnamon Stick, 1 Cardamom Pod, 1/2 tsp Cloves, 1 tbsp fennel seeds, 1 tbsp coriander seeds)
4 to 6 quarts of Water
A small palm sized amount of Rock Sugar (or 2 tbsp Granulated Sugar)
1 tbsp of salt/msg (depending on preference)
1-2 tbsp of Fish Sauce
2 tbsp chicken bouillon
Pho Noodles
Green Onion
Thinly sliced Yellow Onion
Lime
Optional: Thai Basil
Optional: Bean Sprouts
Optional: Thai Chili Peppers/Jalapenos
Optional: Hoison Sauce
Optional: Sriracha Sauce
Optional: Chili Oil

Shred your chicken! Separate your meat from the carcass. Skin can be put in for stock too but I air-fry the skin as a little snack/topping for later.

Peel your onion/garlic! Toast it lightly to give it some char.

Toast your spices! Once fragrant, put them into the spice bag.

Assemble your stock pot: carcass, onions, ginger, spice bag, rock sugar. Put in 4-6 quarts of water (make sure it covers the carcass) because it will reduce.

Let it get to a boil and make sure to skim off the scum/foam off the top with a mesh strainer/spoon/ladle.

Once it's been 30 minutes, take out your spice bag and reduce your heat to medium. Let it simmer for no longer than 2 hours! Make sure to continue to skim off the scum/foam off the top while simmering.

Once it's been up to 2 hours, you can remove everything besides the broth in the stock pot. I was lazy on stream and didn't put the broth through a mesh strainer but I did it off stream when I was packing the food away.

From here you are going to adjust seasoning to taste (chicken bouillon, fish sauce, sugar, salt, msg, if necessary).

Assemble a bowl of pho! Cook your noodles in boiling water for 10-45 seconds and then fluff it up in the bowl and then add your toppings. Pour your broth and enjoy!
