Add 5 cups of water to a pot with green peppers, diced onion, and chicken stock seasoning.
Dice 1 potato, half a carrot, and some chayote, then add to the pot.
Allow the vegetables to boil for about 15 to 20 minutes until tender.
In another pot, add 1.5 pounds of ground pork, 1 egg, 1 teaspoon of adobo, 1 teaspoon of cumin, 1 teaspoon of paprika, and 1 teaspoon of black pepper.
Add 0.5 cup of cooked white rice and mix everything together until well incorporated.
Set the meat mixture aside.
Dice 1 onion, 1 garlic clove, 1 bell pepper, some cilantro, and a handful of spearmint leaves.
Add the diced ingredients to the ground pork mixture and mix again.
Form the mixture into meatballs and add them to the soup.
Allow the meatballs to cook for about 15 minutes.
