Wash and dry the pork shoulder thoroughly, then cut it into about four pieces.

In a mortar and pestle, smash thyme and garlic, then add weary weary pepper and pimento pepper and crack them.

Place the smashed ingredients in a bowl with the pork and mix well with the seasonings.

Pack the seasoned pork into a clean jar, adding thyme stems, sugar, salt, clove, and black peppercorn on top.

Pour white vinegar into the jar until the pork is fully submerged, then cover tightly and let it pickle for 3-4 days at room temperature or 7 days in the fridge.
