Boil water in a large pot.
Add fresh noodles and cook until tender, about 5-7 minutes.
Drain noodles and set aside.
In the same pot, heat oil over medium heat.
Add chopped onions and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add diced potatoes, carrots, and chickpeas; cook for 5 minutes, stirring occasionally.
Mix in chopped spinach and kale; cook until wilted, about 2-3 minutes.
Add chopped tomatoes, cumin, coriander, black pepper, and salt; stir well.
Pour in enough water to cover the vegetables; bring to a simmer.
Cook for 15-20 minutes until vegetables are tender.
Stir in lemon juice and adjust seasoning as needed.
Serve hot, garnished with yogurt and fresh herbs.
