Kudu, a staple in Botswana, is often enjoyed during communal gatherings and celebrations. The meat is prized for its rich flavor and is traditionally prepared in stews or grilled. Today, kudu dishes are celebrated not only in Botswana but also in various parts of Southern Africa, showcasing the region's diverse culinary heritage.

Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and garlic; sauté until translucent, about 3-4 minutes.
Add diced kudu meat; brown on all sides, about 5-7 minutes.
Stir in chopped carrots and bell peppers; cook for another 5 minutes.
Add diced potatoes and tomatoes; mix well.
Pour in beef broth and red wine; bring to a simmer.
Add bay leaves, thyme, black pepper, and salt; stir to combine.
Cover and reduce heat to low; let simmer for 1-1.5 hours until meat is tender.
Check seasoning and adjust salt and pepper as needed.
Remove bay leaves before serving.
Garnish with chopped parsley before serving.
