1/4 teaspoon ground pepper
1 teaspoon corn starch
1/2 cup water
2 tablespoons vegetable oil (for cooking)

Remove the skin from 2 lbs of chicken thighs and cut into pieces.

Season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of ground pepper, and 1 teaspoon of Chen cooking wine. Mix well to ensure the chicken absorbs the flavors.

Add 1 tablespoon of corn starch and 1 tablespoon of vegetable oil to the chicken. Mix again and let it rest while preparing other ingredients.

Grate a piece of ginger to get 1 tablespoon and slice one green onion.

In a bowl, combine 1 tablespoon of light soy sauce, 1 teaspoon of dark soy sauce, 2 tablespoons of white rice vinegar, 2 tablespoons of black rice vinegar, 1 teaspoon of chazen cooking wine, 2 tablespoons of sugar, 1 teaspoon of chili paste, 1/4 teaspoon of ground pepper, 1 teaspoon of corn starch, and 1/2 cup of water. Mix to dissolve the corn starch and sugar.

Preheat a pan on high heat until it begins to smoke, which takes 2 to 3 minutes. Add 2 tablespoons of vegetable oil.

Add the grated ginger to the pan and stir, then add the chicken pieces, spreading them out in the pan.

Put the garlic and ginger from the edges onto the chicken to prevent burning. Let it sear for 3 minutes.

Flip the chicken pieces and cook for another 3 minutes, then stir for 1 minute for even cooking.

Add 1/2 tablespoon of dark soy sauce and stir for 1 minute to give the chicken a beautiful golden color as it caramelizes.

Pour in the seasoning sauce and turn the heat to medium. Stir for 1 minute and 30 seconds until the sauce thickens.

Sprinkle the sliced green onion on top before serving.
