1.5 lbs boneless skinless chicken breast (cut into bite sized chunks)
6 cloves garlic (diced)
4 tbsp brown sugar
4 tbsp honey
4 tbsp hoisin sauce
2 tbsp rice wine vinegar
1 tbsp sriracha
1 tbsp sesame oil
1 tbsp ginger (diced)
1 cup water
1 yellow onion (chopped)
1 red bell pepper (chopped)
1 small head broccoli (chopped)
2 tbsp olive oil
3 tbsp cornstarch
4 tbsp water

Dice garlic and ginger then mix all the sauce ingredients and set aside.

Chop chicken into large bite size pieces.

Set Instant Pot to sauté.

Add 2 tbsp of olive oil to Instant Pot when the pot is HOT.

Add chopped chicken and stir every 2 minutes for 6 minutes.

Turn sauté off, add 1 cup of water and scrape the pot bottom clean with a flat wooden spatula.

Add the pre-mixed sauce.

Put the lid onto the Instant Pot and set to 5 minutes.

Once done, release the pressure.

Mix all ingredients (scraping the bottom for any stuck pieces).

Stir in the onions, peppers, and broccoli.

Put the lid back onto the Instant Pot and set to 0 minutes.

While cooking, mix 3 tbsp cornstarch and 4 tbsp water together to make a cornstarch slurry.

When the Instant Pot comes to pressure and beeps, release the pressure.

Cancel Pressure Cook and press Sauté.

After the pin drops, remove the lid, and stir in the cornstarch slurry, stirring often.

When the sauce begins to boil, cancel sauté and stir the ingredients.

The sauce will thicken in about 3 – 4 minutes.

Serve over white rice.
