General Tso's Chicken

Cultural Context

General Tso's Chicken is a popular dish in Chinese-American cuisine, often served in Chinese restaurants across the United States. It is named after a 19th-century Chinese military leader, but its origins are debated, with some attributing its creation to chefs in the U.S. in the 1970s. The dish is characterized by its sweet and spicy sauce, making it a favorite among diners.

🥗Healthier: tofu

💰Cheaper: chicken thighs

Tofu is lower in calories and suitable for vegetarians; chicken thighs are often cheaper than breasts.

1

Cut the chicken breasts into bite-sized pieces.

2

In a bowl, add the chicken, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, and 2 tablespoons cornstarch. Mix well and let marinate for 15 to 30 minutes.

3

In another bowl, combine 1/2 cup all-purpose flour, 1/4 cup cornstarch, and a few pinches of ground black pepper. Mix well.

4

Heat oil in a white saucepan over medium heat for shallow frying the chicken.

5

Using tongs, dip the marinated chicken into the flour and cornstarch mixture, shaking off the excess, and drop it into the hot oil.

6

Fry the chicken until golden and crispy, flipping occasionally. Once done, transfer the fried chicken to a paper towel to drain excess oil.

7

In a bowl, combine 1/4 cup low sodium soy sauce, 2 tablespoons rice vinegar, 2 tablespoons hoisin sauce, and 2 tablespoons cornstarch. Mix until smooth without lumps.

8

In the same pan used for frying, add 2 tablespoons of the frying oil, then add 1 tablespoon chopped ginger and 1 tablespoon chopped garlic. Sauté for a couple of minutes until golden.

9

Add 4 dried red chillies to the pan and sauté for a few seconds.

10

Lower the heat and add the sauce mixture to the pan, then immediately add the fried chicken to prevent the sauce from thickening. Toss to coat the chicken in the sauce.

11

Add 1 teaspoon dark soy sauce to deepen the color, and stir-fry for a couple of minutes.

12

Add 1 tablespoon sesame seeds and drizzle 1 teaspoon sesame oil for aroma. Garnish with chopped green onion.

13

For the noodle stir-fry, add 1 tablespoon butter to a hot pan, then add 1 tablespoon chopped garlic and sauté until soft.

14

Add 1 teaspoon chili flakes and sauté for a few seconds.

15

Pour in 2-3 tablespoons soy sauce and mix well.

16

Add 1/2 tablespoon brown sugar and mix everything together. The sauce is ready.

17

If desired, crack an egg into the noodles and scramble it in.

18

Serve the General Tso's Chicken in a bowl, garnished with everything bagel seasoning over the noodle stir-fry.
