Prepare the marinade by mixing olive oil, minced garlic, paprika, cumin, salt, black pepper, lemon juice, and red wine in a bowl.
Rub the marinade generously over the pork ribs and place them in a resealable bag or dish.
Refrigerate the ribs for at least 2 hours, preferably overnight, to allow the flavors to penetrate.
Preheat the grill to medium-high heat, around 375°F (190°C).
Remove the ribs from the marinade and let excess marinade drip off.
Place the ribs on the grill, bone side down, and cook for about 15 minutes.
Flip the ribs and cook for another 15 minutes, basting with leftover marinade if desired.
Check for doneness; the ribs should be tender and slightly charred.
Remove the ribs from the grill and let them rest for 5 minutes before slicing.
Garnish with chopped fresh parsley and serve with lemon wedges.
