Remove the leaves from the cauliflower head for a cleaner cut.
Chop off the stem of the cauliflower with a sharp knife.
Cut the cauliflower into smaller florets, keeping them even for even baking.
Wash the florets before making the batter.
In a large bowl, combine 1 cup of all-purpose flour, 1 cup of milk, 1 tablespoon of oil, and 1 teaspoon of garlic powder. Mix until slightly lumpy.
Dip half the cauliflower florets into the batter, ensuring they are evenly coated.
Prepare a bowl with 1 cup of panko and dip the battered cauliflower into the panko to coat.
Place the coated cauliflower on a baking sheet lined with parchment paper, ensuring space between each piece.
Preheat the oven to 400°F (204°C).
Bake the cauliflower for 15 minutes until the bottom starts to brown.
Remove the cauliflower from the oven and toss it with buffalo sauce while still hot.
Transfer the coated cauliflower back onto the baking sheet.
Add a small amount of water to the leftover buffalo sauce in the jar, shake it, and pour it over the cauliflower for extra coating.
Return the cauliflower to the oven for an additional 5-10 minutes to crisp up.
Serve the buffalo cauliflower wings with celery sticks, carrot sticks, and ranch dressing.
