3 large cloves of garlic
450 ml sunflower oil
juice of half a lemon
3 egg yolks
a touch of water
a touch of salt

Crush 3 large cloves of garlic to remove the peels.

Slice the garlic in half and crush it a bit more to expose the inside.

Heat 450 ml of sunflower oil until it reaches 90°C.

Add the crushed garlic to the heated oil to infuse the flavor.

Remove the oil from heat and let it cool down with the garlic still in it.

Juice half a lemon, making sure to catch any seeds.

Separate 3 egg yolks from the whites using your fingers.

In a mixing bowl, combine the egg yolks, lemon juice, a touch of water, and a touch of salt.

Whisk the mixture to create an emulsion and thicken it to a mayonnaise-like texture.

Slowly pour in the infused garlic oil while whisking to create the aioli.
