Garlic Aioli

1 egg yolk
1/4 cup olive oil
2 tablespoons lemon juice

Start with one egg yolk and save the egg white for later.

Add garlic to the yolk.

Add a little Dijon mustard and whisk together.

Add salt to the mixture.

Drizzle in 1/4 cup of olive oil very slowly, drop by drop, while whisking continuously.

After the first 1/4 cup of olive oil, you can add the oil a little faster.

Add about 2 tablespoons of lemon juice, which is roughly the juice of one lemon, starting with half of that.

Taste the aioli and adjust with more lemon juice, salt, and pepper as needed.
