1

Preheat the oven to 400° F (200° C) and prepare a baking sheet with parchment paper or non-stick spray.

2

In a large bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of kosher salt. Whisk together.

3

Cut 1/2 cup of cold unsalted butter into small pieces and add it to the flour mixture. Use a pastry blender or your fingertips to cut the butter into the flour until it resembles coarse crumbs.

4

If desired, add 1/2 cup of dried fruit, chocolate chips, or nuts to the mixture.

5

In a separate bowl, combine 2/3 to 3/4 cup of buttermilk with 1 teaspoon of pure vanilla extract. Stir to mix.

6

Gradually add the buttermilk mixture to the flour mixture, mixing gently until just combined. Do not overmix.

7

Turn the dough out onto a floured surface and knead gently until smooth. Shape the dough into a 7-inch round.

8

Use a 2 to 2.5-inch round cookie cutter to cut out scones. Gather scraps and cut out additional scones as needed.

9

Brush the tops of the scones with milk for browning.

10

Bake in the preheated oven for 17 to 20 minutes or until golden brown and a toothpick inserted into the center comes out clean.

11

Let the scones sit for 5 to 10 minutes before serving.
