Preheat the oven to 180°C (350°F).
In a large bowl, combine self-raising flour, diced unsalted butter, a pinch of salt, sugar, and baking powder.
Rub the mixture together until it resembles coarse crumbs, leaving some chunks of butter.
Add a splash of milk and 150 grams of dried fruit that has been soaked in orange juice for half an hour.
Gently bring the mixture together without overworking it and cover it to chill in the fridge for half an hour.
Roll out the dough to an even thickness and cut into desired shapes using various cutters.
Place the shaped scones onto a baking sheet.
Brush the tops with extra virgin olive oil.
Bake in the oven for about 15 minutes until golden and doubled in size.
Remove from the oven and let cool on a cake rack.
Serve warm with clotted cream and jam.
