Zucchini can offer a similar texture when fried, while potatoes are more commonly available.
Peel the green plantains and cut them into thick slices, about 1-2 inches long.
Soak the plantain slices in salted water for 10-15 minutes to enhance flavor.
Heat oil in a deep skillet over medium heat until shimmering.
Fry the plantain slices in batches until golden and tender, about 3-4 minutes per side.
Remove the plantains and drain on paper towels to absorb excess oil.
Using a flat surface, press each fried plantain slice to flatten it slightly.
Return the flattened plantains to the hot oil and fry again until crispy, about 2-3 minutes per side.
Remove from oil and drain on paper towels again.
Sprinkle with salt, garlic powder, and black pepper to taste.
Serve hot with lime juice drizzled on top.
