Zucchini can offer a similar texture when fried, while potatoes are more commonly available.
Start by preparing the saltfish and putting it on to cook.
While the saltfish is cooking, prepare the green plantains by washing them off.
Peel the plantains, which can be difficult, and cut them up.
Soak the peeled plantains in a little salt water for a while.
Add salt to the plantains while soaking to flavor them.
Prepare the saltfish by cleaning it and leaving it in cold water to soak until ready.
Get a pan ready to cook the saltfish and baked beans using olive oil.
Once the oil is hot, add scallion, onion, bell pepper, tomato, garlic, and hot pepper to the pan.
Add crushed red pepper and the cleaned saltfish to the pan, breaking it down to simmer.
Add the Bush's baked beans to the pan and gently stir everything together.
Cover the pot to help the mixture steam and simmer.
Prepare the plantains for frying by drying them with paper towels.
Once ready, fry the plantains until they are golden yellow and soft.
Press the fried plantains using a saucer or a tin to flatten them.
After pressing, place the plantains on a napkin to absorb excess oil.
