Peel the green plantains and cut them into 1-inch thick slices.
Heat vegetable oil in a deep skillet over medium-high heat until shimmering.
Fry the plantain slices in the hot oil for about 3-4 minutes until golden and slightly soft.
Remove the fried plantains and drain on paper towels.
Using a flat surface, press each fried plantain slice to flatten it.
Return the flattened plantains to the hot oil and fry again for 2-3 minutes until crispy and golden brown.
Remove the tostones from the oil and drain on paper towels again.
Sprinkle with salt immediately after frying.
Mix garlic with lime juice and water to create a dipping sauce.
Serve the tostones hot with the garlic-lime dipping sauce.
