Fried Green Plantains (Tostones)

Traditionally made from unripe plantains, they are twice-fried to achieve a crispy texture, making them a perfect accompaniment to various dishes or enjoyed on their own. Tostones have become popular in many cultures, often served with a variety of dips or sauces, showcasing their versatility in modern cuisine.

Cut the scotch bonnet pepper in half and set aside (optional for spice).
Cut half an onion into medium-sized pieces.
Cut one whole tomato into medium-sized pieces.
Chop scallions into small pieces.
Take about two sprigs of thyme and set aside.
Peel the green plantains carefully, keeping the skins intact as much as possible.
Cut the green plantains into medium to large-sized pieces.
Open a can of garbanzo beans, rinse them, and set aside.
Add about four tablespoons of ketchup to a ceramic container.
Add a couple of tablespoons of water to the ketchup, enough to cover it, and mix thoroughly.
Heat about two tablespoons of olive oil in a pot over medium heat.
Add the chopped onions to the pot and stir, avoiding browning them.
Add the chopped tomatoes to the pot after the onions have cooked a little.
Add the rinsed chickpeas to the pot and stir.
Add black pepper, adobo, and garlic powder to the pot, tasting as you go for seasoning.
Add the ketchup mixture to the pot along with one tablespoon of barbecue sauce and mix well.
Cover the pot and let it cook for about five to six minutes, then turn off the heat and set aside.
Heat about three tablespoons of oil in a separate pot for frying the plantains.
Fry the green plantain pieces until there is no more white showing, flipping them occasionally.
Remove the plantains from the oil and place them on paper towels to drain.
Place the fried plantains between folded paper towels and mash them with your hands until flattened.
Return the mashed plantains to the hot oil and fry until crispy and golden brown.
Remove the tostones from the oil and drain on paper towels again.
Sprinkle with salt immediately after frying.
