Jerk Chicken

Cut up 4 stalks of scallion and add to the blender.

Add a handful of thyme to the blender.

Add 1/3 cup of pimento seeds (allspice) to the blender.

Add 2 tablespoons of browning to the blender.

Add 1/3 cup of vinegar to the blender.

Add 2 ounces of water to the blender.

Blend the marinade until smooth.

Prepare 1.5 chickens by cutting them into quarters (wings, breasts, thighs, legs).

Pour the jerk marinade over the chicken.

Add 2 tablespoons of salt to the chicken and rub it in.

Cover the chicken with foil and refrigerate to marinate overnight.

After 24 hours, preheat the grill to high.

Place the marinated chicken on the grill.

Turn down the grill heat to prevent burning.

Baste the chicken with the remaining marinade and Red Stripe Beer.

Turn the grill heat down to steam the chicken for another 7 minutes.

Serve the chicken traditionally in foil paper with ketchup and Scotch bonnet pepper on the side.
