3 tablespoons of fresh ginger root
3 bottles of Red Stripe beer
4 whole chickens, cleaned
2 tablespoons of ground allspice (for dry rub)
2 tablespoons of ground ginger (for dry rub)
2 tablespoons of garlic powder (for dry rub)
1 tablespoon of dry thyme leaves (for dry rub)
12 heaping tablespoons of Worcestershire sauce
1 stick of melted butter
1 fresh onion, rough chopped
1 fresh bell pepper, rough chopped

Prepare the brine by combining 64 ounces of water, 3 tablespoons of clover honey, 1/4 cup of sea salt, 1/4 cup of light brown sugar, 2 tablespoons of ground allspice, 1/4 cup of black peppercorns, 2 scotch bonnet peppers, 5 smashed garlic cloves, 4 halved scallions, and 3 tablespoons of fresh ginger root in a pot.

Bring the brine mixture to a rolling boil, then refrigerate until completely cool.

Once cool, add 3 bottles of Red Stripe beer to the brine.

Add 4 cleaned whole chickens to the brine and let them sit for 2 hours in the refrigerator.

After 2 hours, remove the chickens from the brine and place them in a doubled Aldi bag.

Prepare the dry rub by mixing 2 tablespoons of ground allspice, 2 tablespoons of ground ginger, 2 tablespoons of garlic powder, and 1 tablespoon of dry thyme leaves.

Add the dry rub to the chicken in the bag and shake to evenly distribute the spices.

Add 12 heaping tablespoons of Worcestershire sauce to the chicken and mix well, ensuring the marinade covers all the chicken.

Rough chop 1 fresh onion, 1 fresh bell pepper, and add them to the marinade.

Add 1 stick of melted butter to the chicken and mix everything thoroughly.

Refrigerate the marinated chicken for 12 to 24 hours, preferably 24 hours.

Prepare the grill and cook the chicken, allowing the fire to roast it well.

Optionally, add pimento wood to the grill for additional flavor and let it smoke for about 15 minutes before serving.
