Olive oil reduces saturated fat while maintaining moisture.

Peel and slice the potatoes.
Boil the potatoes for about 15 minutes until tender.
Mash the boiled potatoes.
Add heavy cream and butter to the mashed potatoes and mix until combined.
Add sugar and salt to the potato mixture and mix well.
Cover the potato mixture and refrigerate overnight.
The next day, add flour to the potato mixture and mix until a dough forms.
Divide the dough into portions about the size of an orange.
Roll each portion out on a floured surface to about 10-14 inches wide and thin.
Preheat the griddle and cook each lefse for about 1 minute on each side until lightly browned.
Remove from the griddle and keep warm by covering with a towel.
