1 small yellow onion, sliced
1 small cubanelle or red pepper, sliced
3 cloves of garlic, minced
2 chicken bouillon cubes
1/2 cup tomato paste
2 cups of water
10 manzanilla olives
12 oz of dried spaghetti

In a large pot, bring water to a boil. Add salt to taste and cook the spaghetti for 10-12 minutes or until done to your liking. After it’s cooked, strain the spaghetti and set aside.

In a large sauté pan, heat the oil and cook the onion and pepper until soft and translucent. Add minced garlic and cook for 30 seconds.

Add chicken bouillons and mash with the back of a spoon to dissolve them. Add tomato paste, stir and cook for about 1 minute. Add water to dissolve tomato paste. Stir in olives. Add cooked spaghetti and mix them with the sauce.
