Traditionally enjoyed as a hearty lunch, it's often garnished with fresh herbs and served with lime and chili for a burst of flavor. Today, Bun Rieu has gained popularity beyond Vietnam, with variations found in many Southeast Asian countries.

Prepare the rice vermicelli according to package instructions; drain and set aside.
Peel and devein the shrimp; chop half and leave half whole for garnish.
Sauté onion and garlic in a pot until fragrant, about 2-3 minutes.
Add chopped shrimp and cook until pink, about 3-4 minutes.
Stir in the crab paste and cook for another 2 minutes to release flavors.
Add chopped tomatoes and cook until softened, about 5 minutes.
Pour in the chicken broth and bring to a simmer; season with fish sauce and salt.
Add the whole shrimp and simmer until cooked through, about 2-3 minutes.
In serving bowls, place a portion of rice vermicelli and ladle the broth over them.
Garnish with green onions, cilantro, and bean sprouts.
Serve with lime wedges and chili on the side for added flavor.
