Break 8 eggs into a bowl.

Add 400 grams (14oz) of sugar and mix roughly.

Add 3 lemon zests and 85 grams (4 tbsp) of honey to the egg and sugar mixture.

Sift together 400 grams (14oz) of flour and 20 grams (4.5 tsp) of baking powder, then add to the mixture and mix gently.

Add 250 grams (9oz) of melted but lukewarm butter and 130 grams (1/2 cup) of milk to the batter and mix well.

Let the batter rest overnight in the fridge.

After 24 hours, fill a piping bag with the batter.

Butter and flour the madeleine pans generously.

Pipe the batter into the pans, filling them full.

Bake at 375°F for 5 minutes, then lower the temperature to 325°F for another 5 minutes.
