Originating from the Lorraine region of France, madeleines are small sponge cakes shaped like shells. They are traditionally served with tea or coffee and are often associated with French literary culture, notably in Marcel Proust's work "In Search of Lost Time". Today, madeleines are enjoyed worldwide, with various flavors and fillings reflecting local tastes.

Melt 7 tablespoons of butter in the microwave or on the stovetop until foaming, keeping an eye on it to prevent burning.
In a bowl, combine 100 grams of all-purpose flour and 1/4 teaspoon of baking powder, then sift together.
Once the butter is melted, if browned, add 1/2 tablespoon of butter to bring it back to the original amount.
In a stand mixer or with an electric hand mixer, beat 2 large eggs and 1/2 cup of granulated sugar on high for about 8 minutes until thick, glossy, and light-colored, leaving a trail with the whisk.
Fold in the dry ingredients gently to retain air bubbles, ensuring a homogenous mixture.
Optionally, add 1 teaspoon of vanilla and 1 teaspoon of lemon zest and fold in gently.
Drizzle in the browned butter and fold until fully incorporated, creating a silky mixture.
Cover the batter with plastic wrap to prevent a skin from forming and chill in the fridge for 1 hour.
Brush a madeleine pan with butter and chill the pan in the freezer.
After chilling, preheat the oven to 375°F.
Scoop about 1 tablespoon of batter into each madeleine shell, treating the batter gently to retain air bubbles.
Bake in the preheated oven at 375°F for about 9 to 12 minutes, checking for doneness around 11 minutes.
Once baked, let the madeleines cool and dust with powdered sugar before serving.
