Combine white bread flour, whole wheat bread flour, yeast, salt, butter, sugar, and water in a bowl and mix.
Cover the dough and refrigerate for 30 minutes.
Crumble feta cheese in a bowl, add egg and flour, mix well, then add mozzarella cheese and combine.
Remove the dough from the fridge, fold it, and place it back in the fridge for a long cold fermentation of 18 to 24 hours.
After 20 hours, divide the dough into two pieces and shape each into tight dough balls.
Cover the dough balls and let them proof for about 1 hour.
Preheat the oven to 210°C (410°F) or 230°C (445°F) with a fan.
Flatten each dough ball, roll it out into an oval shape, and shape the edges into a crust.
Spread the filling evenly over the dough and place it on nonstick baking paper.
Bake in the preheated oven for 13 to 15 minutes until golden brown.
Remove from the oven, create a nest for the egg yolk and butter, and brush the edges with butter.
