Cultural Context
Munkoyo is a traditional Zambian beverage made from fermented maize and sorghum, often enjoyed during social gatherings and celebrations. This drink reflects the rich agricultural heritage of Zambia, utilizing locally sourced ingredients. While it is typically non-alcoholic, some variations may produce a slight alcohol content due to fermentation. Today, Munkoyo is cherished not only in Zambia but also among Zambian communities abroad, celebrating cultural identity and heritage.

Millet flour is nutritious and can be used as a gluten-free alternative.

Mango provides a different flavor profile while still being sweet.
Add water to the pot.
Once the water starts heating up, add cornmeal a little bit at a time to avoid lumps.
Cover and let it boil for about 45 minutes.
Turn off the stove and set the porridge aside to cool down.
Add brown sugar to the cooled porridge.
Add Menkaure roots and press them down to soak into the porridge.
Cover and let it sit overnight for the roots to infuse.
The next day, scoop out the roots from the porridge.
Sieve the porridge to achieve a smooth drink.
Pour the smooth drink into a container and seal it.
Set aside for about three days to ferment, or up to seven days for a stronger flavor.
