Cut the pork belly into thick slices.
In a large pan, add enough water to cover the pork slices.
Add 1.5 tbsp of salt, 2 tsp of black pepper, 3-4 pieces of bay leaf, 1 whole head of garlic (crushed), 1 large onion (sliced), and onion leeks to the water.
Bring the water to a boil.
Turn the pork slices occasionally to cook both sides evenly.
Lower the heat and let it simmer for about 20 minutes or until the pork is tender.
While the pork is simmering, prepare the dipping vinegar sauce by mixing 8 tbsp of vinegar, 2 tsp of black pepper, 2 large onions (finely minced), chopped chili (optional), salt to taste, 1 tbsp of sugar, 2 tsp of soy sauce, and 5 tbsp of water.
Set the vinegar sauce aside.
Once the pork is tender, remove it from the pot and let it cool slightly.
Pat the pork slices dry with paper towels.
Sprinkle salt over both sides of the pork slices.
Heat oil in a pan over medium heat.
Once the oil is hot, carefully place the pork slices into the oil.
Fry the pork until the skin turns golden brown and crispy.
For an even crispier result, let the meat rest after the first fry, then fry it again until crispy.
Serve the crispy pork belly hot with the dipping vinegar sauce on the side.
