Chicken thighs provide a leaner option while pork shoulder is more affordable.

Avocado oil has a higher smoke point, while vegetable oil is often less expensive.
Preheat the oven to 220°C (428°F).
Score the skin of the pork belly in a crosshatch pattern.
Rub salt and black pepper generously into the skin and meat.
Mix crushed garlic and chopped fresh herbs with olive oil and rub over the meat.
Place the pork belly on a rack in a roasting pan, skin side up.
Pour vinegar over the skin to help it crisp.
Roast in the oven for 30 minutes until the skin begins to bubble.
Reduce the temperature to 160°C (320°F) and continue roasting for 1.5-2 hours.
Check periodically, basting with pan juices to keep the meat moist.
Increase the temperature back to 220°C (428°F) for the last 15-20 minutes to achieve maximum crispiness.
Remove from the oven and let rest for 10 minutes before slicing.
